What are the origins of sugar craft?

Decorating cakes has been a long tradition in the United Kingdom. Originally cakes were decorated with royal icing but as the craft spread round the world to hotter climes - to countries such as Australia and South Africa - it was discovered that royal icing developed with old recipes was not a suitable icing as it set very hard. As a result sugar paste was developed as it was more maleable in warm conditions.

With time new recipes were developed so royal icing did not set so hard and the combination of icing and sugar paste in cake decorating blossomed. Today it has become a popular craft in many countries around the world.
